Palomino is more commonly associated with sherry. Indeed Barbadillo are known for their range of fortified wines from this famous region in Southern Spain. Unfortified palomino is delicious, too, as evidenced by the lovely Sabalo named after a fish native to the region. The label is a huge giveaway that this is a wine for sipping an sunny days with lashings of seafood.
