Winemaker Matthias Pippig earmarks certain barrels while the wine is ageing which demonstrate certain characteristics to bottle separately. For Pilgrim, he's looking for the pure, fresh side of Syrah with minimal oak influence. Perfect with anything grilled on the bbq or with some juicy roast beef.
